Strawberry + Basil for a savory combo!

This strawberry chicken is perfect with the fresh basil, tangy balsamic, sautéed garlic, and sweet strawberries. We’re basically using strawberries in place of tomatoes, and the result is absolute deliciousness! A simple, low-carb, and Keto-friendly recipe you can make in less than 20 minutes.

Spring is definitely in the air, and I am enjoying berry season like it’s never coming back! From my Dark Chocolate Raspberry Brownies, Strawberry Breakfast Bake to my Blueberry and Mango Spinach Salad with Basil Vinaigrette, and now this Strawberry Basil Chicken. I love to use fruit to dress up a savory dish, especially during the spring and summer.

Best part about this dish, it comes together in only 20 minutes. You can make it on the skillet or the grill!

How to make Strawberry Basil Chicken:

Here are the easy ingredients you will need for this recipe:

  • chicken
  • balsamic vinegar
  • garlic cloves
  • strawberries
  • fresh basil
  • sea salt

This dinner is so simple to make! You can choose to make on the stovetop or the grill.

  1. Marinate the chicken in balsamic and garlic.
  2. Heat a large skillet to high heat, then cook for 4-6 minutes per side
  3. Chop up fresh strawberries and basil.
  4. Once cooking is complete, top chicken with strawberries, basil, and extra balsamic if you want!

Grilling your Chicken:

For the grill, heat to a medium high. While the grill is warming up, marinate the chicken in garlic and balsamic. Grill for 6-8 minutes per side and serve with strawberries, basil, and extra balsamic.

Serving and side dish options:

So you may be wondering what to serve as a side dish? I served mine on top of a bed of greens, and had a fantastic salad. I also spiralized some onions and cucumber for more crunch and texture. Ingredients 

  • 3-4 large chicken breasts
  • 1-2 tbsp olive oil
  • 3 garlic cloves, crushed
  • 3 tbsp balsamic vinegar + more to taste
  • 1/2 tsp sea salt
  • 1/2 tsp pepper
  • 2 cups chopped fresh strawberries
  • 1 cup chopped fresh basil

Instructions 

  • Begin by heating a large skillet to medium heat.
  • Prepare your chicken breasts: you may need to pound the breast to make them a bit thinner, mine were approximately 1 inch. While the skillet is heating up, marinate the chicken with garlic and balsamic vinegar.
  • Add oil to the pan. Cook for 3-5 minutes per side (until golden brown, but cooked through). Set aside.
  • Meanwhile, prepare the topping. Toss together strawberries and basil. Top each chicken breast with strawberry mixture, and salt and pepper to taste. Add additional balsamic vinegar or balsamic glaze* if desired. Serve immediately.

Notes

Balsamic glaze is a thick syrup like version of balsamic vinegar, it is also a bit sweeter. It can be found in some grocery stores near salad dressings.

    Wow!! My husband and I are trying to eat healthier and this recipe looked good.
    It is FANTASTIC!!
    I cheated a bit and used Skinny Girl Balsamic Vinaigrette dressing and sprinkled in Garlic Powder (since I was out of fresh), salt &pepper into a big baggie to marinate the chicken for about 10 minutes then just dumped it all into a hot skillet with hot EVOO.
    cooked to temp, and the extra marinate cooked off and became a lovely glaze.
    Wonderful with fresh local ripe strawberries and fresh basil.
    I served with roasted zucchini quarters topped with parmesan cheese. YUM!!!

    So dang good!! Instead of searing the chicken, I marinated it in the salt, pepper, fresh garlic and oil. Grilled it and then topped it with the strawberries, basil and balsamic glaze. SO SO SO GOOD!!! Thank you!!

    I tried the Strawberry Basil Chicken and it turned out wonderful. What I did was different was use Mrs. Dash Tomato Basil Garlic 1/2 tsp instead of fresh basil. I am not lucky to have fresh herbs accessible to me. I also added fresh tomatoes and blueberries. It was popping with flavor. I used sea salt instead of regular salt and extra virgin olive oil.
